Christmas Linzer Cookies Recipe

These buttery shortbread cookies filled with jelly are a traditional Austrian dessert. This recipe is quick and easy to make! Before you get started, here is what you’ll need:

Ingredients:

  • 2 cups all-purpose flour

  • 1 cup unsalted butter, at room temperature

  • 1/2 cup granulated sugar

  • 1 large egg yolk

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 1/2 cup of your favorite jam (traditionally red currant)

Instructions:

  1. In a medium-sized bowl, whisk together the salt and flower and set aside when you are done.

  2. Grab the butter and sugar and mix together in a large bowl until light and fluffy - make sure to beat the butter as well. Once finished, add the egg yolk and vanilla extract, and beat until well combined.

  3. Now, grab the flour mixture and add to the butter bowl until a dough forms. Split the dough in half and wrap each half in plastic. Refrigerate for at least 2 hours.

  4. Preheat the oven to 350 degrees Fahrenheit. Find a baking sheet and place parchment paper on top.

  5. Pour some flour on a surface and roll the dough until 1/4 inch thickness. Grab cookie cutters and cut your desired shapes by placing them on top of the dough.

  6. Once you have the shapes cut out, use a smaller knife to cut out the center of half of the cookies. For the remaining solid cookies, spread a small amount of jam on the center of them. Finally, place the cut-out cookies on top of the jelly-covered cookies, and make sure to seal the edges.

  7. Place the cookies on the baking sheet and cook for 8-10 minutes. Monitor the cookies and take them out once the edges are golden brown.

  8. Take out the cookies and let them cool for 2-3 minutes before moving to a wire rack where they will cool for longer.

  9. Once the cookies have cooled down, you can decorate with icing if you’d like.
